
Things needed to prepare Ofe-Onugbu
- Meat- Get like 7 medium pieces
- Smoked fish, Like 1 medium size.
- Stock fish, Like 1 medium size.
- Onugbu or bitter leaf to be washed properly a large cunk of the leaves.
- Coco-yam (thick), Like 5 small sizes.
- Crayfish (The grounded one), like 3 Table spoons.
- Palm-oil, Like 2 cooking spoons.
- Dried grounded pepper, like 2 table spoon.
- Any preferred tasty cube of your choice - 2
- Ogii-1 wrap.
- Water-Like 2 litres
- Add Salt for a tasty soup.
Start with washing and boiling the stock-fish for about 30 minutes and let it soften. The coco-yam has to be peeled and boiled till it’s very soft for about 25 minutes. The coco-yam needs to be pounded to be able to form a paste.
Get a pot and place it on the gas, add water and allow it to boil heavily.
Palm oil needs to be added and the stock-fish would be washed and bone smoked.
The crayfish, fish, pepper, Ogilli with the coco-yam paste should all be added together.
You have to stir very well and allow it to simmer for about 10 minutes, add any favorite cube of yours before adding the washed bitter leaf or Onugbu leaves and then cook for another 10 minute, the steaming soup would be thick by the time it boils very well.
The soup needs to be stirred very well and tasted, add salt and make it simmer for another 5 minutes.
